Great Coffee Has History
Our PROBAT G90 has been roasting coffee in the Sacramento area since the 1990s, but its story goes back much further. We believe it’s almost 80 years old. We’ve followed its history all the way back to Germany, hoping to understand exactly where it's story began.
Even more interesting? Rumor has it it’s one of just a few from this period still roasting in the U.S. today, and here at our family-owned Sacramento roastery, it’s still doing what it does best, turning certified organic green beans into coffee you love. Plenty of history—and plenty of great coffee ahead.
Classic German Engineering. A Hands-On Approach.
Our vintage PROBAT G90 was built to keep roasting. Its solid cast-iron construction holds heat steadily, and its continued use reflects the craftsmanship that makes classic PROBAT machines worth keeping.
We’ve customized ours to roast with hot air, pairing its traditional rotating drum with convection heating. As the drum tumbles the beans, heated air moves through the coffee, helping it roast evenly and giving our team control over how each batch develops.
Every coffee calls for a slightly different approach. Our roaster’s manual airflow control, known as the aroma wheel, lets our team adjust how hot air moves through the coffee. Along with temperature control, it helps us bring out the sweetness, balance and character of each origin and blend.
We pay attention to what leaves the roastery, too. Our afterburner treats roasting exhaust before it’s released outside, helping reduce smoke and odors. It’s one practical way we care for the air around us and the Sacramento community we call home.
